Simple and scrumptious salmon. Also works if you want to BBQ it.
This recipe makes 3-4 servings.
Prep time: 10 min.
Cook/BBQ time: 15-20min.
3-4 pieces of salmon
2 cloves garlic, minced
1-1/2 tspn. white wine
2-1/2 tblspn. honey
4- tblspn. balsamic vinegar
2-1/2 tspn. dijon mustard
salt & pepper to taste
1-1/2 tspn. oregano
Preheat oven to 400 degrees F (200 degrees C). Line a baking pan with aluminum foil & spray with non-stick cooking spray.
Coat a small saucepan with non-stick cooking spray.
Over medium heat, cook & stir garlic until soft (about 3 min.).
Mix in white wine, honey, vinegar, mustard, salt & pepper. Simmer uncovered for about 3 min. or until slightly thickened.
Arrange salmon on pan and brush with balsamic glaze & sprinkle with oregano.
Bake for 10-18 min., or until flesh flakes easily with a fork. Brush with remaining glaze & season with salt & pepper.
