1/2 lb uncooked prunes
1 quart water
8 medium-sized whole potatoes
1/8 cup of sugar
1/2 c. salt
Juice of 1/2 lemon
3 raw potatoes, grated but not drained
1/2 c. flour
2 T butter or melted schmaltz
1/2 t. salt
dash of pepper
Cover prunes with water, bring to a boil, and remove from the flame.
Place 8 whole potatoes in a 3-quart greased casserole.
Add prunes and the water in which they have cooked.
Add sugar, salt, and lemon juice.
Cover and bake at 350 for 1 1/2 hours
Mix together the grated potatoes, flour, fat, salt and pepper, and spoon this mixture over the prunes and whole potatoes.
Bake covered for 2 hour.
Remove cover and continue baking until the top is reddish brown 30 minutes to 1 hour. Serves 8
