Chocolate Nut Torte – Mary Gitlin

Mary (Lawson) Gitlin was the youngest of the four Lawson siblings including Irving, Harry, and Betty. This was the cake that Mary brought for Pesach and other holiday dinners.

Preheat oven to 350 and butter and line a 5″ X 12″ loaf pan with parchment paper.

Ingredients:
3 oz butter
1 cup sugar
4 oz of high quality bittersweet chocolate melted and cooled
1 3/4 c ground nuts chopped finely
5 eggs
1 teas vanilla

Grind nuts in Cuisinart with 1/4 cup of the sugar from above.  Set aside.

Cream butter and remaining sugar.  Then, add egg yolks one at a time.  Beat well.  Add melted chocolate, mix well and add ground nuts.

Beat up egg whites and fold into the above being careful not to over mixt but being sure that egg whites are well incorporated.

Pour into cake prepared cake pan.

Bake 45 minutes
