Here’s the recipe for my mother’s lekach (honey cake). My wife bakes several of these cakes every year around Rosh Hashono time and they are as good now as when my mother baked them.
Irwin
4 eggs
1 cup sugar
1 cup honey
½ cup oil
3 cups flour
4 tsp. cocoa

½ tsp. salt
2 tsps. baking powder
1 tsp. baking soda
1 tsp. clove
1 tsp. ginger
1 tsp. all spice
½ cup bourbon
Cream sugar and oil, add eggs and honey. Alternate adding flour and coffee. Add cocoa, nuts, raisins (roll raisins in flour before adding so they don’t sink), bourbon and spices.
