Gefilte Fish – Grandma Ruth’s

4 lbs white fish (combination of ling cod, black cod, halibut, red snapper and a little salmon for color)
4 eggs
carrots
celery
onions
matzo meal
paprika

Preheat oven to 350°.

Cook and cool carrots, onions and celery in boiling water. After cooking, allow
water to continue to boil as it will be used again.
Blend the vegetables and add to the blend of grounded fish.
Add some salt and pepper and enough matzo meal to form balls.
Wet hands and begin to form balls, dropping the balls into the boiling water.
The balls will rise to the top when they are done.
When they have risen to the top, carefully spoon them out with a large slotted spoon and place on a baking sheet.
Bake in the oven for about 90 minutes covered.
Uncover and bake for an additional 30 minutes, adding water as needed to keep them moist.
Place them on a platter and garnish with some of the extra carrots sliced thin on each ball. Sprinkle with a dash of paprika.
Garnish the platter with parsley and make sure to have plenty of red horseradish on hand.
