Carrot Kugel

1 CUP MATZO MEAL
2 LB CARROTS TO MAKE 2 1/2 CUPS OF MASHED COOKED CARROTS
1/4 CUP BROWN SUGAR
1/4 CUP WHITE SUGAR
1 TSP SALT
3/4 CUP MELTED BUTTER OR MARGARINE
3 EGGS SEPARATED
3 DROPS OF LEMON JUICE

Mash carrots, mix sugars, add to carrots, add butter/margarine and egg yolks; add matzo meal and salt. set aside.

Beat egg whites, fold egg whites into carrots mixture.

Pour into a greased 9×9 dish and bake 45 minutes in a 375 degree oven

This recipe can be double for 9×12 pan.
