Chocolate Passover Cake (Dairy)

2/3 cup butter
3/4 cup sugar
3 eggs
1/2 cup cocoa
1 cup almonds, finely ground
1 1/2 tbsp fresh grated orange peel
1/4 cup orange juice
1 cup matzoh cake meal

 

Mixer directions:
Place butter and sugar in bowl.  Mix on medium until mixture is creamed and fluffy.
Add eggs one at a time, beating well after each addition.  On low speed, mix in remaining ingredients

Grease an 8″ round cake pan and line bottom with waxed paper. Pour batter into pan and bake at 375 degrees for 25 minutes.
Cool in pan for 30 minutes, then turn on cake rack.
Peel off waxed paper and cool completely before serving.

Chocolate Glaze Topping:
1/2 cup cocoa
1/3 cup butter
1/4 cup honey

Combine cocoa, butter and honey in saucepan. Cook over low heat until mixture is smooth. Stir constantly. Pour into mixer bowl and beat at medium speed until thickened.

Pour glaze over cooled cake.
Makes 1 cup
