Blintz Loaf

Batter
(Mix Together)
1/3 cup butter
1 1/4 cup flour
1/2 cup sugar
1 tsp baking powder
2 eggs
1/2 tsp salt
3/4 cup milk

 

Filling
1 lb cottage cheese or ricotta
Mix 2 tbs butter (melted), 1 egg, 1 tsp sugar, 1 tsp salt

Alternate layers starting with batter. Bake in 9″ square pan (to double, use 13 x 9)
End with layer of batter.

Bake at 350 degrees for 1 hour or more.
