Soup Cakes

Robin (Rykus) Lawson

2 T. of melted schmaltz
2 eggs beaten
1 1/2 C. sifted flour
1 t. baking powder
3/4c. cold water
Stir melted schmaltz into the eggs.
Sift flour with baking powder.
Add to eggs.
Add water and stir until smooth.
Fill lightly greased toy muffin tins two thirds full.
Bake at 400 degrees until lightly browned. (about 30 min.)

Serve in hot, clear chicken soup. It makes 24 little balls, and we hoped there would be some left for lunch the next day…usually not!!
